Carrot Apple Ginger Juice

Bright, thin, and actually juice — not a smoothie. The masticating juicer presses the liquid out and leaves the pulp behind.

This is the glass we make when we want juice, not a blended breakfast. Carrot, apple, a little ginger, a squeeze of lemon. It drinks cold and clean, with none of the foam a centrifugal juicer throws into the pitcher.

You'll feed everything through a masticating juicer. That's the slow kind with an auger — it chews, then presses. Cut the produce so it fits the chute, and let the machine work. Don't pack it. Don't rush it.

A blender would keep all the fiber in the glass, which is a smoothie. That's a different drink, and we like that one too. This recipe is for the days you want it pressed.

Carrot Apple Ginger Juice

Ingredients

  • 1 lb (450g) carrots, scrubbed, trimmed, cut to fit the chute
  • 2 sweet apples (Honeycrisp or Gala), cored and cut into wedges
  • 1-inch piece fresh ginger, peeled
  • ½ lemon, peel cut away

Instructions

    Set up the masticating juicer with the juice jug and pulp container in place. Parts should be locked — if the auger isn't seated, it will just chew and go nowhere.

    Feed the carrots through first, one or two pieces at a time. Use the tamper gently; don't force a whole handful.

    Follow with the apple wedges, then the ginger, then the lemon. Alternating hard and juicy pieces keeps the auger from packing.

    Stir the juice — a little foam on top is fine; it should still look like juice, not a puree. Taste. If you want it brighter, run another squeeze of lemon through.

    Drink it cold, soon. It will separate as it sits; a quick stir brings it back. Compost the pulp or freeze it for stock.

Notes

  • This is juice, not a health claim. It tastes like carrots and apples.
  • No masticating juicer? A blender plus a fine-mesh strain will get you close, but it'll be cloudier and you'll wash more dishes.
  • Greens (a handful of spinach or kale) can go in after the carrots. Don't expect a sweet juice if you add a lot.
